Abstract

The international and national market of pork meat of Yucatan from 1995 to the 2005 is analyzed. It was found that pork meat´s production is an important activity in Yucatan and its commercialization towards the world intensified; that the consumption of imported pork meat in the state increase in the last years bringing the diminution of the production of the local pig cattle ranch and the one of the consumption of the internal production; that the existing infrastructure in Yucatan is given by Grupo Porcícola Mexicano with which has included a greater number of markets, it constitutes the departure point of the main commercial channel of this meat, distributing to national, regional and international level; that the commercial trading with Asia, has allowed to the country and the state to become more competitive in the market of this meat, philosophy of costs reduction and search of Asian market niches that pay the quality of the pig meat; and that the production of pork meat of Yucatan by itself, has not had impact in the world-wide market through its exports having given consequently a loss of macroeconomic competitiveness of the state pig activity and a low and inadequate insertion of its products in the international markets.
